Whenever visiting downtown Belton and are looking for something sweet or savory,consider going to the local restaurant Early Light Creperie. Filled with customers, it is a popularplace for brunch. The business is open from Thursday to Monday from 7 a.m. to 3 p.m. and isclosed on Tuesdays and Wednesdays. Early Light Creperie is owned by Victoria Sobiech and her mother, Alice Sobiech.
鈥�(The business) started from an idea when we went to Paris in 2022,鈥� Victoria Sobiech said. 鈥淚 stood off a cobblestone street waiting for a cafe cr猫me and watched a man making a crepe. I just knew at that moment that it鈥檚 what I wanted to do: granted, I grew up with crepes my entire life. We started the process in the summer of 2022 and opened in June of 2023同城快约.鈥�
The restaurant has pink walls, vintage and antique glassware, and pictures of Paris to commemorate its start. Every month, they have different food features. This month, their features are fall themed. It consists of the Pumpkin Pie Crepe, Butternut Squash and Pear Crepe with cranberry sauce, and Alice Sobiech鈥檚 French Onion Soup.
鈥淚 have definitely enjoyed my business in every aspect.鈥� Victoria Sobiech said. 鈥淲hile there are overwhelming moments, it doesn鈥檛 make me not enjoy my place. I love that my mom and I are our own bosses. (It鈥檚) truly a great part (of it).鈥�
The ingredients for the restaurant come from multiple sources and are mostly homemade, according to Victoria Sobiech. The crepe batter recipe, which is over 40 years old, is her father鈥檚.
鈥淢y favorite part is my regulars.鈥� Victoria Sobiech said. 鈥淭he fact that our place feels homey to them and a safe space (means a lot). I don鈥檛 know if there鈥檚 anything interesting about our business. While we don鈥檛 share ingredients or how things are made, if someone asks us about how we came to be, facts about pictures, or items around the restaurant, we definitely share all about us.鈥�
With the restaurant鈥檚 homemade ingredients and support of its regulars, Early Light Creperie can be added as a nice place to stop in Belton.
